Dinner

Spinach and Sausage Soup

Cut up 1/2 lb. of sweet italian sausage and brown in some oil.  Add 4 cups chicken broth, a little dried oregano, 1 chopped up onion, 1 sliced carrot and simmer covered for 10 minutes.  Throw in 2 cups chopped spinach and let sit for a couple of minutes.  Serve with some shredded parmesan cheese on top, crusty bread, red wine.
Easy peasy lemon squeezy.
