Mix salad greens (pretty ones) with some arugula, chopped up endive, pomegranate seeds, chopped red onion if you're feeling exciting, and some chunks of grapefruit. Put the dressing on it (see below) and then crumble some herbed goat cheese and toasted walnuts on top. This salad tastes best during the month of December, for some reason. And it's very pretty- the pomegranate seeds look like little Christmas lights.*

*Once I made this when I had some little nieces and nephews visiting. They loved the pomegranate seeds- not to eat, but to use as tiny Christmas decorations. I found them sprinkled about, everywhere, long afterwards.
